Golden Beet Borscht

Served hot or cold this is a wonderful, low-fat, nutritious, super-easy, and fast recipe - even for those who think they don't like beets! Golden beets are completely different than the red ones. They are absolutely gorgeous and almost buttery in flavor. Don't be afraid, just try it!"

Ingredients

6 large golden beets
1.5 quarts of homemade chicken stock
2 tsp. turmeric powder
fresh dill
yogurt or sour cream (optional for a dollop)
kosher salt (to taste)


Instructions

Preheat oven to 400 degrees. Wrap each unpeeled beet in aluminum foil and place them on a cookie sheet. Cook for 1 to 1.5 hours until you can easily poke a toothpick in. Remove from oven and let cool. Remove foil and the skins can easily be rubbed right off. Chop the beets course and put in blender, add chicken stock and turmeric (and salt to taste) blend until you get a smooth and creamy texture. Serve hot or cold with chopped fresh dill on top
