Texas Baked Potato Soup

*4 medium baking potatoes
*7 Tablespoons thinly sliced green onions
*4 Tablespoons butter or margarine
*3 Tablespoons All Purpose flour
*½ teaspoon salt (you may want to add more…depending on your taste)
*½ teaspoon pepper (you may want to add more…depending on your taste)
*4 cups milk
*1 cup Sharp Cheddar Cheese
*¼ cup Pepper Jack cheese
*5 slices bacon (cooked crisp and crumbled)
Instructions
Wash and poke potatoes (with a fork or knife) then bake at 425 deg. for 45-60 min. until tender. Or if you have a Baked Potato setting on your microwave, you can use that. Let cool, then scoop insides out into a separate bowl and set aside, discard the skins.
In a large saucepan, sauté 3 Tablespoons of the green onion in the butter over medium heat until tender. Add flour, salt and pepper and stir. Then add the 4 cups of milk at once. Cook about 15 minutes, stirring constantly, until it thickens and gets bubbly. Then add the potato, ½ cup of the Cheddar Cheese, all of the Pepper Jack cheese and about half of the crumbled bacon.
Serve topped with the remaining Cheddar cheese, bacon and green onion
