Delicious & relatively low fat & low calorie recipe white chili w/black beans.
Turkey or Chicken Chili
INGREDIENTS
2 cups cooked turkey or chicken
1 onion chopped
1 red bell pepper chopped
2 cloves garlic chopped
1 tsp cumin
1/4 tsp cayenne pepper
2 tsp chili powder
16 oz chicken stock
8 oz fat free half & half
1 can black beans (rinsed)
1 can green chilies
1 can chicken corn chowder
1-2 tbsp extra virgin olive oil
Instructions
Over medium heat, sauté in olive oil, onion & pepper. Season with salt & fresh ground pepper.
When onions & pepper are transparent add garlic & green chilies, turkey or chicken, heat through.
Add chili powder, and cumin, heat thru.
Transfer into soup pot add chicken stock, half & half, chicken corn chowder, beans, and the sautéed onion mixture.
Heat thru; do not let boil. Enjoy
