Seafood Gazpacho

An elegant soup to serve as a first course or main dish. "


1 large can chicken stock
Hand full cilantro
1 lime
2-3 cloves garlic
4 large avocados
1 yellow pepper
1 orange pepper
1 English cucumber-diced
4/5 Roma tomato-seeded and diced
1 lb cooked shrimp-diced
1 lb. lump crab-diced


In Cuisinart blender, blend chicken stock, hand full cilantro (or to taste), juice of 1 lime, garlic, and 1 of the avocados.
Ladle into beautiful soup bowls and top with the diced vegetables, shrimp, and crab.
