Luscious Asparagus SoupUser Submitted Recipe
2 lbs asparagus rinsed and cut into one inch pieces
2 onion bullion cubes
4 cups water
I large onion diced
6 tbls. Butter
2 tbls. Canola oil
Pepper to taste
Add butter to soup pot; when almost melted, add oil.
Sauté onions in the butter and oil until translucent.
Add pepper and asparagus without the tips to pot.
Cover pot and let cook on medium heat about 10 minutes. Add bullion and water. Cook about 5 minutes. Adjust seasoning. (pepper and salt)
Put into blender and blend until smooth. Heavy cream may be added at this point if more richness is wanted
