Black Bean Soup with Sausage

A quick, hearty recipes perfect for busy weekday nights, but would also be a great starter for weekend entertaining.


1 package (16 ounces) smoked sausage
1 medium onion, finely chopped
2 cloves garlic, crushed
2 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon red pepper flakes
2 cans (16-19 ounces each) black beans, rinsed and drained
1 can (14 ounces) chicken broth
1/2 cup cilantro leaves
Lime wedges


Cook sausage in a large soup pot until browned, and then remove from heat.
Add onion and cook five minutes or until tender.
Stir in the garlic, chili powder, cumin and red pepper flakes. Cook about 30 seconds.
Add the beans, broth and 2 cups of water and bring to boil. Reduce heat and simmer, uncovered, for 15 minutes.
Blend until almost smooth.
Add sausage and cilantro and heat through. Adjust seasonings, if desired.
