Hemingway's Watermelon and Ahi Tuna SoupUser Submitted Recipe
Hemingway would love it!
6 cups seedless watermelon, in chunks.
2 Heirloom Tomatoes, skinned.
1 shallot, fine dice.
Fresh ginger, thumb nail size, shaved.
2 Garlic cloves, smashed.
1 Orange, juiced, save pulp.
1 table sugar.
2 tsp rice vinegar.
1 table lime and lemon juice.
Salt & Pepper
Ahi Tuna: 4 - 3 oz. portions
1 tbsp flour
Garnish: cilantro, mint and green onion.
Purée watermelon in three batches...hold.
Heat oil and sweat shallots and ginger.
Add garlic and turn heat to simmer. Do not burn!
Add OJ, pulp and vinegar to deglaze pan.
Move all to blender, purée.
Add watermelon then strain and refrigerate.
Ahi Tuna: season each with salt/ pepper and lightly dust w/ flour.
Heat large sauté pan to med-high in thin layer of oil.
Sauté steaks 2 min. on each side.
Ladle soup in shallow bowl, center steaks.
Garnish w/ pinch of combination of green onion, mint and cilantro
