Baked Potato Soup

Great for a cold, rainy day. Warm, comfort food to savor while you read a juicy novel. "


1 tablespoon butter
1/2 cup chopped onion
1 14-oz can of chicken broth
2 large baking potatoes, peeled and cut into chunks
Dash of garlic
Salt and pepper to taste
1/2 cup grated cheddar cheese
1 cup sour cream
4-6 slices bacon, cooked until crispy, drained, and crumbled


Saute onions in butter in a saucepan. Add chicken broth, potatoes, garlic, salt and pepper. Cook over medium heat until the potatoes are soft. Using a hand potato masher, mash potatoes in the saucepan. Don't overmash, as little chunks of potatoes enhance this soup. Add cheese and sour cream. Stir gently over medium heat until the cheese is melted. Do not boil! Remove from heat and add bacon crumbles.
Serve hot. Garnish with grated cheese, bacon crumbles, and/or chopped green onion.
