Celery Salad
A tasty fresh salad that is very unique and easy to put together. Please use organic/non-gmo, local ingredients when possible, they really do make a better tasting salad & obviously is better for you. This recipe is based on 1 generous serving size to make it easy to multiply. The ingredients in this recipe are really 'to taste' and the exact amounts are not at all important - it's all about what you like. (Basically my goal is to put in equal parts of each veggie, fruit and the cheese - then to enhance those flavors with basil, bacon and dressing) The pinch of salt may not be necessary because the bacon is so salty - depending on your tastes.

INGREDIENTS
1 celery stalk, sliced 1/2"
8+ cubes(from fresh mozzarella block, cut 1" cubes)
1/4 cup dried cranberries
2T pine nuts, toasted
1/4 cup black olives, sliced
1-2T bacon, freshly cooked, drained, crumbled
4 grape tomatoes, halved (or cherry tomatoes, quartered
1T fresh basil ribbons
extra virgin olive oil (very high quality)
aged balsamic vinegar
(best ratio is 4T oil to 1T balsamic - you will not need that much for 1 serving)
sea salt (finely ground)+ pepper
Instructions
1) Add ingredients to a large bowl, except the oil & vinegar- mix all ingredients together gently.
2) Drizzle desired amount of oil and vinegar mixture (just enough to get onto all of the ingredients very lightly).
3) Sprinkle just a pinch of salt and pepper (to taste).
4) Toss salad, gently
5) Serve or chill for a short time if desired (wait to drizzle oil & vinegar until you serve).
