Pork free collard greens.
Not your Grandma's Collards
INGREDIENTS
one package of smoked turkey
1 large yellow sweet onion
season salt
crushed red peppers
2 bundles of Collard greens
8 cups of water
Instructions
In a large pot add water and turkey.
Boil on low setting for about 2 hours covered.
Before adding greens add 1 more cup of water if needed.
Season water with season salt and teaspoon of crushed red peppers.
Clean greens laying them one on top of the other about 6 at a time.
Cut up onion and add to water.
Roll them into a tube and cut length wise add to water.
Continue this step until all greens are in water.
Cover and cook for about 45 mins or until greens are soft and dark green.
Tasting the water periodically adding more season salt as needed.
