Pineapple Coleslaw

Lower in Fat Coleslaw


1 medium cabbage finely shredded
1 large carrot finely shredded
1 15oz Pineapple tibits or crushed drained--save
1/4 cup of juice for dressing
1/2 cup raisins
1/2 cup dry roasted sunflower seeds (optional)

1/2 cup Light Mayonnaise
1/2 cup Fat free or low fat Sour Cream
1/4 cup pineapple juice
1/4 cup honey
1/2 tbsp salt


Combine cabbage, carrots, pineapple, raisins and seeds in large bowl. Mix dressing ingredients and pour over salad. Chill 2 hours before serving.
