Apple, Bacon & Sweet Potato Hash

A really fresh apple and potato hash that will liven up any meal. Easy to prepare!"
Ingredients
2 cups diced sweet potato
1 cup diced potato
1 Tbs olive oil
1 tsp salt
1/2 tsp pepper
5 strips bacon
1 tsp dried thyme
1/2 cup diced onion
1 cup diced tart apple
2 Tbs chopped fresh parsley
Instructions
1. Toss diced sweet potatoes and regular potatoes with olive oil, salt and pepper and bake in a 425 degree oven until they start to brown, about 20 minutes.
2. Chop the bacon into bite-sized pieces and cook in a skillet for 5-7 minutes, or until almost done. Add thyme, diced onion and apples to the skillet with the bacon and cook for 5-7 minutes more or until the onions and apples are softened.
3. Add the baked sweet potatoes to the skillet with everything else and stir gently to combine. Top with fresh parsley and serve!
