This is a delicious side dish and if made well will have a mild flavor from the sauerkraut with most of the flavor coming from the bacon."
Ingredients
1 lb. yellow split peas
3 lbs. sauerkraut
1 lb. bacon, fried until crispy, but save drippings
1 large mild yellow onion, chopped
Instructions
Soak split peas overnight. Cook until mushy, adding water as needed. Cook the sauerkraut until tender, drain thoroughly. Combine the split peas, sauerkraut, bacon and onion. Drizzle the bacon drippings while mixing until a moist consistency is achieved.
