1/4 cup finely chopped onions
1/2 cup finely chopped bell peppers (I like the red and yellow with the green)
1/2 grated yellow zucchini
1/2 feta cheese
1/4 cup Italian bread crumbs.
Mix all together with i beaten egg.
Wash banana peppers about 6 or 8 depending on size.
Slit 1/2 way down to remove seeds.
Pipe the stuffing into peppers and wrap in a foil tent.
Cook on medium grill about 15 mins.
I have stuffed banana peppers with lots of different things but this is one of my favorites.
