Healthy Salad

Ingredients

1 can corn niblets
1 can black beans
1 jalapeno chile pepper, seeds removed and pepper finely chopped
1/2 Vadalia onion, finely chopped
3 tbl snipped cilantro or 1 1/2 tsp of dried
Salt and Pepper to taste
3/4 cup quinoa, wheat berries or brown rice
1/2 cup of dressing of your choice


Instructions

Rinse corn and black beans
Chop pepper, cilantro & Onion
Add everything in a large bowl and mix well until distributed.
You can also add any cooked meat, tuna or chicken of your choice spinach, lettuce and make this a one course meal.
