Slaw with no mayonnaise and shelf life of a week, simple to prepare and very delicious."
Ingredients
1 head cabbage
1 sweet onion sliced paper thin
1 red bell pepper sliced in thin rings
3/4 cups mild veg oil
3/4 c sugar
1 1/2 t salt
1 t celery seed
1 cup cider vinegar
Instructions
Shread cabbage paper thin with sharp knife or electic slicer in large heat proof bowl. Top with thin sliced onion slices-- set aside.
In a small saucepan, heat vinegar, sugar and salt to a simmer and dissolve sugar. Remove from heat and add oil to blend. Add celery seed and stir. Pour hot dressing over vegetables, cover with plastic wrap and refrigerate until cold. To serve, toss vegetables to distribute onion, top with bell pepper slices. Store in refrigerator for several days, up to a week.
