Liz's Summer Tuscan Pasta


1/2 cup fresh basil leaves
1/2 cup fresh parsley
6 large cloves garlic
1/2 cup extra virgin olive oil
1 1/2 pounds very ripe tomatoes
1 tsp salt
1/2 tsp pepper
1 pound of whole wheat pasta


pulse to finely chop the first four ingredients in food processor. add tomatoes, salt and pepper. pulse to coarsely chop tomatoes. place mixture in a non-reactive bowl and cover. let sit for at least an hour.
cook pasta and let cool. pour sauce over pasta and enjoy.
