Mom's Baked Beans

1 pound dried Great Northern beans
1/2 tsp baking soda
1/2 pound bacon, diced
1/2 cup chopped onion
1 tsp salt
2 tsp vinegar
1 tsp prepared mustard
1/2 cup white sugar
3/4 cup packed brown sugar
2 Tbsp catsup or BBQ sauce
2 Tbsp molasses
Instructions
Add baking soda to beans, cover with water by at least 2 inches and let stand for several hours or overnight. Alternatively, bring the water just to a boil, turn off the heat and let stand for a couple of hours.
In the meantime, dice the bacon into 1/2 inch to 1 inch pieces. Place in a frying pan and cook just to render off some of the fat.
Drain the beans and add to a slow cooker. Add the cooked bacon and all the rest of the ingredients; stir well. Add water to cover by 1/2 inch to 1 inch. Cook on high for approximately 8 hours. Cooking time will depend on your slow cooker. I put mine on before I go to bed and the beans are done in the morning.
