Picnic Summer Salad
Warm comfort food but healthy. I didn't appreciate it until many years later the effort and love she put into the food she made for us. We just thought it was good. What a great way to get us kids started off on a healthy path to share with our families.

INGREDIENTS
1 cup Israeli couscous
1/2 cup green lentils
the juice of two lemons
2T lemon juice
1 T garlic
1 small shallot
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 tomatoes
1/2 cup feta
1 cup cut up chicken.
Instructions
Cook the couscous and the lentils separately. When they are cool add them to the chopped up shallots, tomato, herbs, chicken and feta. The rest of the ingredients are the dressing: lemon, olive oil, and shallots. You can improvise ingredients based on what is fresh and in your kitchen.
