Green Bean Quinoa Salad


3 cups Quinoa
3 tsp. Olive Oil
3 Cloves Minced Garlic
6 cups Veggie Stock
1 lb. Green Beans
2 Lemons
1/2 tsp. Salt
1/2 tsp. Pepper
1 1/4 cup Sliced Almonds
1 1/4 cup Craisens
1/2 cup fresh Mint- chopped
1 cup fresh Basil- chopped


Blanch Green Beans for about 5 minutes- drain and cool with ice water. In a large sauté pan, warm up 3 tsp. Olive Oil- add Garlic and sauté for about 1 minute- add Quinoa and sauté for about 2 minutes- add Veggie Stock and juice from one Lemon- bring to a boil and simmer uncovered for about 15 minutes (Quinoa will become translucent and germ will be visible, watch carefully for doneness)- Cover for 5 minutes and then fluff with a fork. Cool.

In a large salad bowl combine the Green Beans, Almonds, Craisens, Mint and Basil. Once Quinoa is cool, add to bowl.

Dressing: Mix 1/4 cup Olive Oil with the juice of 1 Lemon, salt and pepper to taste. Mix with salad and serve.
