Quinoa Fruit Salad

2 cooker cups quinoa
2¼ cups water
1 mango, peeled, pitted and cubed
1 apple, peeled, cored and diced
1 pear, peeled, cored and diced
1 orange, peeled and sliced, bitter white pith removed
¾ cup toasted and chopped pecans
1½ tablespoons fresh mint, chopped
1 tablespoon pure maple syrup
2 teaspoons ground cinnamon
Instructions
Put the quinoa and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, turn the unit off and open the lid. Transfer the quinoa to a baking sheet to cool. Once the quinoa is cool, transfer to a medium-large mixing bowl. Add the remaining ingredients; toss to combine. Adjust seasonings and serve.
