Zucchini Couscous

The White Rice function makes light and fluffy couscous. Mediterranean flavors are at the forefront of this dish and go well with steamed fish."


4 cooker cups plain or whole wheat
couscous (not instant)
3 cups water
½ teaspoon sea salt, divided
21⁄3 cups chopped zucchini (about 2 small
to medium zucchini)
¼ cup chopped fresh mint
2 teaspoons fresh lemon zest
1⁄3 cup chopped fresh parsley
¼ teaspoon freshly ground black pepper
1⁄3 cup extra virgin olive oil


Put the couscous, water and a pinch of salt in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the White Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings and serve immediately.
