Bok Choy, Carrot and Green Apple Slaw


This is a salad.

Ingredients

1 lb. bok choy (4-6 stalks)
2-3 green apples, peeled
3 large carrots, peeled
1 T. fresh ginger, peeled and grated
1 T. sugar/Splenda


Instructions

Split the stalks of bok choy and then slice slaw like. The apples are julienned with the Cuisinart. If this process is going to take a long time place the apples in water and lemon juice to prevent discoloration. The carrots can also be julienned or just shredded.

Place the ingredients in a bowl, and add the ginger and sugar. Toss.
