Scandinavian Herring Salad

Ingredients
2 Lge. salt herring (can use pickled just rinse well)
2 c. canned beets, cubed (reserve some of the liquid 2-3 Tbls)
3 c. cold boiled potatoes, diced
1/2 c. onions, finely chopped
1 c. apple, peeled, cubed
1/2 c. diced dill pickle
1/2 c. chopped walnuts
1 c. mayonnaise
1 tsp, prepared mustard
Salt to taste
1/2 tsp. pepper
5 tbsp. vinegar
1/2 tsp. sugar
1/2 c. sour cream
Instructions
Soak herring in cold water for at least 5 hours. Change water every hour. Skin herring; cut into small pieces.(or rinse pickled well)
Combine herring, beets, potatoes, onions, apple, pickle and walnuts; toss thoroughly.
Combine remaining ingredients; add to herring mixture.
Toss lightly; chill in refrigerator overnight.
Add mixture of additional mayonnaise and sour cream to moisten, if necessary.
Will be pink and look almost like a fluff.
