Sweet Potato Salad


3 Sweet Potatoes (peeled/chopped/boiled in salt water just until tender/cool)
*Be careful sweet potatoes cook faster than white potatoes
2 Tbls Pecan Pieces – (Toasted in skillet over medium heat
W/ 1/8 tsp each Crushed Red Pepper/Garlic Powder and 1/2 tsp Soy Sauce)
1 Thin Slice of Red Onion Finely Chopped
1 Tbls Stone Ground Mustard
1 1/2 tsp Soy Sauce
2 tsp Candied Jalapeno Syrup
1 tsp Candied Jalapeno Peppers Minced
*can substitute a small amount of AC Vinegar and Brown Sugar if you do not like spicy
2-3 Tbls Mayonnaise
1/2 Apple Diced
Paprika / Parsley


In a large glass or Sterling Silver bowl (I am completely anti-plastic bowls) mix:

Red Onion, Mustard, 1tsp Soy Sauce, Candied Jalapeno Syrup & minced Peppers*
2-3Tbls Mayo
Toss in Potatoes and Apple

Garnish with Paprika and parsley
