Stolen Potatoes

This potato side dish is always a big hit when I serve it. It goes with just about any meat entree. It's simple and easy to cook, requiring very little attention."
Ingredients
3 lbs. of potatoes
2 cups of onions in chunks
2 green bell peppers
butter to taste
salt & pepper
Instructions
Peel and wash potatoes, cut into chunks about 2-3 inches in diameter, place in lightly greased casserole dish w/lid. Wash onions % bell peppers and cut into chunks but smaller than the potatoes. Stir onion/pepper mixture into potatoes. Add salt, black pepper and butter and stir completely. Cover and bake in pre-heated 375* oven for 45 minutes. While baking, stir and add more butter as necessary to keep ingredients simmering in melted butter.
