Waldorf-style Coleslaw

Experimentation is key to the success of this recipe. You can substitute just about anything that you prefer. Try some avocado slices, almond slivers, water chestnuts, kale, chopped pear, etc."
Ingredients
4 cups shredded cabbage
1 cup shredded carrots
1 chopped large tart apple
1/2 cup golden raisins
1/2 cup regular raisins
(may substitute grapes for raisins if desired)
1 small can mandarin oranges, drained -reserve 2 tablespoons juice
1/2 cup coarsely chopped walnuts
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1/2 teaspoon celery seed
1/2 tablespoon sesame seed
Coarsely ground sea salt
Freshly ground black pepper
Instructions
In large salad bowl, toss cabbage, carrots, apple pieces, raisins, oranges and walnuts. In small bowl, mix together orange juice, mayonnaise, vinegar, celery seed, sesame seed, salt and pepper until smooth, then toss salad again while adding dressing. Cover and refrigerate at least one hour before serving.
