My Mom's Cabbage Pie

Ingredients
1 lb. of coleslaw mix
3 eggs
2 large onions chopped and sautéed
1/4 cup vegetable oil
1 tsp salt
1/2 tsp. pepper
1/2 cup matzo meal
Pam vegetable spray
Instructions
Preheat oven to 350 degrees.
Place coleslaw in a colander and pour boiling water over the cabbage 2-3 times. (This removes the cabbage odor). Drain well, cool cabbage and mix all ingredients in a large bowl.
Spray an 8 or 9 inch round pan (I use a pyrex pie pan) with Pam. Pour mixture into prepared pan. Press down with a fork and run tines over the top to even out and create a crosshatch pattern. Spray top with Pam. Bake in a preheated 350 degree oven for one hour.
