Connie's Couscous Concoction

Flavorful Side dish which is perfect for summer."
Ingredients
1 ½ cups water
1 cup plain couscous
½ teaspoon salt
8 ounces deli ham in 1 piece (1/2 inch thick) cut into ½ inch pieces
4 ripe plum tomatoes (1 pound), coarsely chopped
12 large basil leaves, thickly sliced
2 green onions, thinly sliced
1 can (15 ounces) garbanzo beans rinsed and drained
¼ cup chopped pimiento-stuffed olive oil
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
Instructions
1. In covered 2-quart saucepan, heat water to boiling over high heat. Remove saucepan from heat. Stir in couscous and salt; cover and let stand 5 minutes.
2. Fluff couscous with fork and transfer to large serving bowl. Stir in ham, tomatoes, basil, green onions, beans, olives, olive oil and lemon juice.
