Sunshine Salsa

“ A beautiful and tasty black bean and corn salsa with rich vibrant yellow, red and green colors. Eye catching colors and bold flavors makes this salsa a hit for any occasion."

Ingredients

2 cans sweet corn
1 can black beans
1/2 cup diced red pepper
1/2 cup finely chopped cilantro
2 tablespoons lime juice
6 chopped scallions
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon cumin


Instructions

Mix above ingredients. Serve.
Hint: Refrigerate overnight for more intense flavor.
