Healthier Potato Salad

Very easy to prepare, crunchy and tasty.
You can use 1 big or 2 small potatoes, and replace the mayo for light mayo to make a lesser calorie side dish."


1 Diced (Boiled) Potato
1 Cup Thawed Mix Veggies
2 Cups Chopped Romaine Lettuce
2 Tbsp Mayonnaise
1 Tsp Lemon Juice
Salt and Pepper


Mix all ingredients and voila, you got your side dish.
