Garlic Mashed Cauliflower

A great substitute for mashed potatoes. Low Carb"


1 large cauliflower
1 cup fat free sour cream
two Cloves of garlic, smashed
2 tablespoons butter or margarine


Cook cauliflower and garlic until the cauliflower is tender. Place in the large bowl of the Cuisinart Food processor, using the cutting blade. Turn on high until it becomes the consistency of mashed potatoes. Add the sour cream and butter and salt and pepper to taste
