Cole slaw in a vinegar dressing with other veggies"
Ingredients
Cabbage
Diced Red or green pepper
Carrots
Cucumber
Sweet Onion
Rice Wine Vinegar
Instructions
Using #2 Slicing disc, Shred 1 small head of cabbage, 1 onion, one cucumber unpeeled. Change to grating disc and grate 1 carrot.
Make a dressing of equal parts water and rice wine vinegar. Add 1 tbsp. kosher salt and three to four grinds of a pepper grinder. Also 5 tsp of sugar (Splenda can be substituted). Pour over the vegetable and let marinate for at least an hour. Can be kept for weeks in the fridge. Gets better with age.
