black eyed pea salad

sweet and savory side dish with a slight kick
that makes you keep going back for more."


1 tsp hot sauce
1/4 cup cider vinegar
1/4 cup sugar
1/2 cup olive oil
2 tablespoons chopped fresh parsley
s and p to taste
2 cans (drained) black eyed peas
red, green, yellow bell peppers minced (1/2 ea.)
2 stalks celery minced
1/2 red onion minced
1 clove garlic minced
1 jalapeno pepper (seeded) minced


Sauté all the vegetables until tender
Combine vegetables and black eyed peas
Combine 1/4 cup cider vinegar, 1/4 cup sugar, salt & pepper, 1/2 cup olive oil and parsley and mix well then add to pea mixture
Taste to re-season
Serve at room temperature. (not cold)
