Cheesy Rice with Hard Salami
User Submitted Recipe
“
Meal in one pot. Main or side dish. I could live off this stuff. Rice doesn't have to be a lump of lifeless white stuff that serves as a bed for another dish."
Ingredients
3 c water
1 c uncooked long grain white rice
¼ c dried sweetened cranberries or raisins
1 cup hard salami, 1/2" cubed
½ t Chinese 5-spice
½ t turmeric
½ t salt
2 T butter
4 oz pasteurized processed cheese, cubed, ex: Velveeta
Instructions
Bring first seven ingredients in a medium sauce pan to a boil then cover and reduce to simmer for 25 minutes.
Remove from heat; add butter and cheese, stir to melt.
Maybe try it next time with some sharp cheese or mozzarella added. Change up the spices some. Maybe add some garlic or ginger powder. If you are cooking for yourself, save a plate and eat it right out of the pot.
