My Favorite Potato Salad


6 Medium red potatoes
1 large onion, chopped
1/4 cup Italian salad dressing (Bernstein's or Newman’s olive oil and vinegar)
1/2 tsp fresh ground black pepper
1/2 cup mayonnaise
2 stalks celery, chopped
2 hard boiled eggs, chopped
Salt to taste


Wash potatoes, leave skin on. Cut into 1/2" cubes. Cook in salted boiling water until tender. Drain and cool.
In bowl mix potatoes, chopped onion, pepper, and salad dressing. Cover and marinate in refrigerator several hours or overnight. Prepare hard boiled eggs.
Just before serving, add chopped celery and eggs, mix in mayonnaise. Add salt to taste.
