Delicious Italian Meatballs

2 slices firm white bread, torn
1 1/2 pounds ground beef
1 large egg
1/4 cup chopped fresh flat/leaf
1/4 cup freshly grated pecorino romano or parmesan cheese
1 garlic clove, minced
1 tsp salt
1/4 tsp ground black pepper
2 tsp olive oil


In Cuisinart food processor or Cuisinart blender, process bread to fine crumbs. Transfer to large bowl. Add ground beef, egg, parsley, cheese, garlic, salt and pepper. Mix until combined. Shape into twelve 2 inch meatballs.

In 10 inch skillet, heat oil over medium heat. Add meatballs and cook, gently turning occasionally, 15 minutes, or until browned all over and just cooked through.
