Homemade Blueberry Vinaigrette

Homemade dressings are much healthier and taste better than store bought. This particular recipe uses whole blueberries, fresh oregano, grainy mustard and a variety of vinegars/oils to create a unique dressing that serves well over a variety of dishes. Keep the extra in a jar in the fridge and enjoy it for days!"


3/4 cup fresh blueberries
1/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup brown rice vinegar
10 fresh oregano leaves
1 tsp grainy mustard
Ground black pepper and a pinch of kosher sea salt


Place all of the ingredients in your Cuisinart mini-food processor and blend until smooth. You'll notice that the dressing will get creamy from the blended, fresh blueberries.

Pour the dressing into a jar and chill in the refrigerator for about an hour. Serve over mixed greens with whole blueberries, toasted nuts and some pan-seared fish.
