Sun-Dried Tomato and Basil Pesto
A twist on traditional pesto, the sun-dried tomato brings a welcome change to this popular sauce.

INGREDIENTS
3 cups extra virgin olive oil
8 garlic cloves
4 cups sun-dried tomatoes (packed in oil; drained)
1½ cups fresh basil leaves
¼ teaspoon freshly ground black pepper
1∕3 cup grated Pecorino Romano
¾ teaspoon sea salt
3 tablespoons white vinegar
Instructions
Put all ingredients, in the order listed, into the jar of your Cuisinart® PowerEdge® 1000 Watt Blender. Run on High for 2½ minutes or until desired consistency is achieved. Adjust seasonings to taste and serve.
