Thai Peanut Sauce

A classic accompaniment to summer rolls, this sauce can also be used with noodles or chicken. "

Ingredients

2 cups coconut milk
½ cup reduced-sodium soy sauce
¼ cup sesame oil
¼ cup rice vinegar
2 tablespoons fish sauce
3 small to medium jalapeños, seeded and cut into 1-inch pieces
3 garlic cloves
8 ½-inch pieces of peeled, fresh ginger (about 1 ounce)
4 cups roasted peanuts
½ cup packed light or dark brown sugar
¼ cup red chile paste


Instructions

Put all of the ingredients, in the order listed, into the jar of your Cuisinart® PowerEdge® 1000 Watt Blender. Auto Pulse on High for about 10 seconds and then run on High for 1 minute, or until completely smooth. Remove and serve.
