Cranberry, Cherry, Ginger and Walnut Marmelade

“
This is sweet and tart at the same time. It is a nice variation of the usual cranberry sauce. It is a great substitute for mayonaisse on a turkey sandwich. It is good on pork or chicken as well. Makes a nice spread with cream cheese on crackers."
Ingredients
3/4 cup sugar (or honey)
1 cup water
1/2 cup port (sweet red) wine
1/4 teaspoon Roasted Saigon cinnamon
1/4 teaspooon freshly ground nutmeg
1/2 cup dried tart cherries
1 - 12 oz. package cranberries
2/3 cup chopped walnuts
1/2 cup crystalized ginger
grated zest of one orange
Instructions
Combine sugar, water, port, cinnamon and nutmeg in saucepan. Bring to a boil. Add cherries and cook for 1 minute. Stir in cranberries, return to a boil. Reduce heat and simmer for about 10 minutes. Remove from heat. At this point you can add the walnuts, ginger and grated orange peel. Serve at room temperature or chilled.
