Salad dressing prepared with citrus juices, champagne vinegar and honey for warmth and sweetness. Dijon, garlic, herb are added for savory with Extra Virgin Olive oil to bind. Drizzle on green salads, broiled fish, crispy roated lamb and simply grilled fruit.
Citrus Champagne Salad Dressing
INGREDIENTS
2 lemons, juiced
2 mangos, peeled and chopped
1 cup orange juice
2 limes, juiced
4 shallots, chopped
4 cloves garlic, chopped
1 cup champagne vinegar
1 cup honey
2 tsp. Dijon mustard
2 cups extra virgin olive oil
1 tsp. dried chervil
Instructions
Blend everything together in Cuisinart processor on low speed until pureed. Pour dressing into a carafe and place in the refrigerator to cool allowing flavors to bloom.
