Pineapple Coconut VinaigretteUser Submitted Recipe
1 3 Oz. Can Crushed Pineapple
1/4 Cup coconut
1/4 Cup Mayonnaise
1 Pinch Salt
1/3 Cup Olive Oil (or as much as desired)
1/4 Cup Balsamic Vinegar
Blend all of the ingredients until creamy.
Pour over a bed of Romaine lettuce
For added flavor and decoration, top with pineapple chunks, coconut, and slivered almonds.
