A great way to cook veggies from your own garden!
1 box bowtie pasta
1/4 cup balsamic vinegar
2 tbsp olive oil
1 tbsp fresh lemon juice
Herbs to taste
2 yellow squash
1 green bell pepper
1 jar of sliced mushrooms, drained
Additional veggies of choice
1. Boil bowtie pasta according to package directions, drain and return to pot.
2. Give all veggies a rough chop and sauté in a large pan, covered over medium heat. Stir occasionally until all veggies are soft. Drain and add to pasta.
3. In a measuring cup, combine vinegar, oil, and lemon juice. Stir rapidly and add to pasta/veggie mixture. Add any desired herbs (oregano, etc.) to taste.
