Pesto Aioli


3 grilled chicken breasts (cubed)

1/4 cup red onion (chopped)

1 lb cooked bowtie pasta

Pine nuts (I used walnuts - cheaper and healthy option)

Dried cranberries


30 oz Mayonaise

7 oz pesto

1/4 cup Dijon mustard


In a large bowl, add chicken, pasta, onion, nuts and some cranberries. Reserve some cranberries for garnish. In another bowl, mix together sauce ingredients. Coat pasta mixture with some (not all) of sauce. Works best to add more sauce right before serving and sprinkle top with cranberries to make it pretty.
