Broken Noodles

Like olive gardens. :-)"


olive oil, divided
1/2 green pepper, sliced thinly
2 cloves fresh garlic, chopped
canned artichokes, drained and chopped
black olives, sliced
fresh mushrooms, sliced
1/4 cup white wine
lasagna noodles, broken into small pieces and cooked
sea salt and pepper to taste
1 tomato, diced
1 cup mozzarella or Italian cheese blend, shredded


In a large frying pan, heat a little olive oil. Stir fry green pepper
about five minutes, being careful not to brown. Stir in garlic and
another minute or so.
Stir in artichokes, olives and mushroom and stir fry a few minutes.
wine and cook til wine is reduced, about five minutes.
Stir in pasta and salt and pepper and heat through.
Serve pasta with tomato, cheese and drizzled with additional olive
oil along with a slice of focaccia.
