Italian Tortellini Salad

A fantastic, easy to make, cold, tortellini salad"


1 Lb tri color tortellini
1 pt cherry tomatoes
1 can jumbo pitted black olives
1 med onion, fine chopped
½ lb fresh mozzarella, cubed
3tbl apple cider vinegar
1 cup olive oil
Salt and pepper to taste


Prepare tortellini according to package directions
While cooking: chop onion, half tomatoes, half olives, and cube mozzarella
When pasta is al dente, rinse and combine with all the chopped ingredients
Mix oil and vinegar in a blender and pour over salad.
Chill 4-6 hours (the longer the better) till serving
