Penne with Fresh Tomato Sauce, Mozzarella and Shrimp

Ingredients

2-3 cups of fresh sweet tomatoes/ cherry tomatoes work well
½ cup light olive oil
2 cloves garlic
Salt/pepper to taste
Cayenne pepper to taste
Large bunch of fresh basil
1 lb whole milk mozzarella cheese
1-1/2 lb penne
¼ cup butter
1 lb medium shrimp
Old Bay Seasoning
extra parmesan or romano cheese (optional)

Sauce
2 cups of fresh sweet tomatoes/ cherry works well
¼ cup light olive oil
2 cloves garlic
Salt/pepper to taste
Cayenne pepper to taste
Large bunch of fresh basil


Instructions

Put sauce ingredients in Cuisinart - blend until sauce like. Put aside
Cut whole milk mozzarella into small pieces. Set aside.
Cook 1 lb penne pasta. Melt butter in pasta

Shrimp
1 lb shrimp/shells and tails off
¼ cup olive oil
Old Bay seasoning to taste
Pour olive oil over shrimp, stir until coated. Sprinkle Old Bay seasoning over shrimp, stir until coated.
Stir fry shrimp on medium high heat until pink.
Pour sauce, cheese, shrimp over pasta – sprinkle with extra parmesan/romano cheese if you like - Enjoy!
