Nut Raspberry Cookies


1 lb sugar
1 lb shortening
1 lb butter
10 oz egg whites
1 oz vanilla
8 oz bread flour
8 oz cake flour
2 lbs finely chopped walnuts


Cream sugar, shortening & butter very light (15 min on 3rd speed) on a 4 speed mixer. Grad add whites & vanilla,continue beating 5 min. (3rd speed) Add flours, mix in, add nuts mix in lightly.
Bag out on parchment paper leave room to spread, bake 400 degrees F.
cool and turn half of the cookies over, place spoonful rasp jam on cookie, top with other half. dust with 6x sugar
