Home Sweet Ham

I grew up savoring this dish on special occasions in the Philippines. My Mom will always make it during the Christmas holidays. Now being here in the U.S.A. for quite several years, my family carry the tradition not only for Christmas but also on Easter holiday and birthdays."


12 to 16 lbs. Whole Ham with bone in and skin (preferably Cooke's brand, but you can use similar ones as long as it has the skin and bone in)
1 Box of Dark Brown Sugar (about 3 to 3 cups)
2 cans of 20 ounce Crushed Pineapple
2 cans of 20 ounce Sliced Pineapple
1 Bottle of Beer (preferably dark and imported)
1 small bottle of Red Cherries (Maraschino Cherries)
Fresh Crushed Black Pepper


Preheat oven at 350 degrees. Place ham into a roasting pan with rack and insert a thermometer into ham without touching bone. Bake ham until thermometer reaches to 160 degrees or 1 1/2 to 2 hours).

While ham is baking, mix 2 cans of the crushed pineapple (drain liquid), box of dark brown sugar and beer. Then cook over medium heat on stove in deep pan until mixture becomes slightly thick. Add black pepper. Keep stirring to avoid overflow, for at least 45 to an hour. Then set aside.

Remove ham after reaching cooking temperature. Do not discard drippings. Trim off tough outer skin from ham and discard burnt fat from pan. With a spoon or spatula, evenly pat prepared Pineapple mixture all around ham. Cover ham as much as you can with heavy duty foil. Pour remaining mixture into roasting pan to mix with drippings. Then bake for another 30 to 45 minutes until thermometer reaches 140 degrees.

Let ham cool off and decorate with sliced pineapples and red cherries (center of each sliced pineapples).
